Nutty over Nutrient-Dense Nut Butter Bars

What's better than opening your freezer to find that perfect delicious, dense, and need I say it, crave-able healthy treat? Well, these chewy and sweet nut butter bars are going to rock your world while able to be made free from many common allergens and additives.

If you have kids at home, they are a perfect grab and go replacement to the sugary processed bars. If you're heading out for a hike, pack up a couple to fuel the trek without the packaging, serve as a sweet after-dinner treat, curb that 2-3pm sweet tooth or bring to a brunch pot-luck (in time).

The recipe takes less than 10 minutes to prep and if you make them as often as we do, you may even come up with some more time-saving methods.

Prep Time: 10 minutes

Freeze Time: 15 minutes

Total Preparation Time: 25 minutes

Makes 15 - 1.5 inch squares

Ingredients:

  • 1.5 cups nuts, seeds (any combo - pecan, walnut, almond, peanut, pumpkin, sunflower seed or cashew)
  • 2 cups densely packed dried figs (stems and pits removed). *Sometimes I swap or add in some fig for apricot
  • ¾-1 cup natural almond butter or peanut butter 
  • ½ cup raw (local/raw) honey 

Optional (but recommended) ingredient additions:

  • 1/2 cup dark chocolate chips
  • 1 tbsp cinnamon powder
  • 1 tbsp vanilla powder
  • 1/4 cup whole flax seed or chia seed
  • 1/4 cup raw hempseed
  • 1/2 cup shaved coconut (blend or press into top)
  • 3 tbsp collagen dissolved into nut butter (optional)

Recipe Instructions:

Pulse nuts, seeds in a food processor for about 15 seconds or to a fine crumble. Set aside in a bowl.

Par chop dried fruit and finish in food processor until a crumble forms (before large ball forms). Return nuts and seeds, almond butter and honey and any optional ingredients to food processor and pulse until combined. Lightly coat an 8-cup reVessel container with coconut oil (or other 6X9 or 8x8 dish) and pour mixture in. Cover with wax paper and pack evenly, pressing firmly across the top with hand, another tray or flat dish until all sides and corners are level. Place in freezer for at least 15 minutes to cool completely or overnight. Remove from container onto reVessel cutting board and cut into desired shapes such as 1X1 and 2X2 for a quick snack or a 1X3 bar as a side at breakfast. Enjoy or return to fridge or freezer until ready to pack up for the road.
