Chef Mike's Zero Waste Chimichurri Sauce
This sauce... the one that is perfect for using up miscellaneous herbs and aromatics like the 1/4 red onion would otherwise get thrown away marries perfectly with grilled veggies like carrot, zucchini and many more while also makes for a delicious marinade or sauce to add pizazz to grilled pastured chicken or steak.

Ingredients:
- 1 cup fresh parsley
- 1 cup fresh cilantro
- 1 cup fresh mint
- 3 Tbsp fresh oregano
- ¼ cup red onion, diced
- 3 cloves garlic peeled
- 1 lemon, juiced
- 2 tbsp red wine vinegar
- ⅛ tsp crushed red pepper flakes
- ½ tsp kosher salt
- ⅛ tsp black pepper
- ½ cup olive oil
Recipe Instructions:
Pulse all ingredients together in a Vitamix or high-powered blender for 20-30 seconds until well combined. Store in the refrigerator and serve as a dressing, dip or marinade.
